Brad Hightow, Executive Chef, father and grill enthusiast has dedicated his life to food. With a passion for cooking and creating that stems from him teaching himself from a very young age, it quickly became a hobby – before it became his career. 

Having trained in San Francisco and Las Vegas, he’s been a resident of San Diego for 11 years and has been sharing his passion for cooking at Urge Gastropub since its opening.

When Brad chooses his flavors, he ensures to choose seasonal goods first and bases his flavor profiles around them. From locally sourced meats to homemade sauces, it’s all from the area, giving it that unique San Marcos flavour.

Urge Gastropub and Common House

The ever-so appealing city of San Marcos in California has another establishment to add to its list of must-visit eateries – Urge Gastropub & Common House. This industrial looking restaurant specialises in wholesome foods and craft beers brewed on site. From burgers and steaks to salads and flatbreads, people come for the food and stay for the company. 

 

Brad insists that even the most delicious recipes don’t need lots of ingredients, but perhaps some unconventional ideas – namely sticking a beer can in a raw chicken. 

Using the Megamaster 5 Burner Gas Grill, he’s going to whip up a citrus and rosemary glazed beer can chicken, with a side of grilled asparagus and herb roasted potato wedges. 

The beer Brad selected is one that’s brewed in-house, the Mason Aleworks Willy Time beer, because the citrus flavors in the brew will match the flavor profile of the glaze.

His personal opinions on grilling is very much in line with the Megamaster message in that, it brings people together and is a no mess way to cook anything.
